WIERD Overheating . . . Sort of. Any input appreciated . . .

I have a 305 TPI w about 150K. I am yanking the 305 to swap a 350 in, but since replacing the stat and the radiator, I have an odd problem. When the car reaches normal operating temperature, the temp gauge will sometimes creep from 175 slowly to the edge of the red, and just after, will slowly return to normal. This will repeat continuously sometimes, but not all of the time. Like I said, the motor is coming out anyway, but I'm curious if anyone has any idea what's going on.

BTW, I also have a problem with the heater. It takes FOREVER to kick in, and until it does, it blows cold air. Then, with no warning, or discernable reason as to why, BOOM! Heat! Related???

Some cars (ford's 6 cyl) are also notorious for having air pockets in the coolant system. The needle will be jumping quickly from one extreme to the other.
