Why dont you just do the math on a full tank? Make sure to write down the millage before and after you fill up, also write down the price and how many gallons it took from empty to full and... to complicate things...

I drove across the US in my bird, 305 with a holly 650 (put on smaller jets) and I swear it was getting around 20mpg on the highway. The average person hears that and gets all confused because they think V8=5mpg

I have a 305 with a Holley 600 cfm carb on it and on my trip down to college i averaged about 26 mpg. If you keep up with maintainence, you should be able to get at least 22 highway.

My 350 with Holley 750 gets about 12mpg in the city and probably close to 20 on the highway. Mines tuned for the track though, not to be a fuel miser.
A 305tpi with a stick shift should get mid to high 20's on the highway. On a trip up the Coast a couple of weeks ago Dyno Don got 26mpg on a 12 second 350 tpi with a t56. I got 24 on my 350 with a t5. When Don had a 305 and t-5 in a Rs converted to tpi with the peanut cam, he averaged 30 on a trip from So Cal to Reno and back with one tank that got 31. If you drive it hard you can probably get it down to 18 on the highway though.

88 5.7l with 2.77 rear....I drive almost exclusively on the highway, I'm getting 23mpg on 91 octane. Around town it dips to something like 18 or 19, not too shabby, although $3.17 a gallon aint great!

i get 14-16 city...most of that is the way i drive my car...im sure i can crank 17-18 out.
Highway i got 24.5 last time i had it...i could prolly get 25 mpg highway as i floored it a few times.
