Problems when engine is cold
When I reach the breakover from 1st to 2nd gear, the car tends toward (and sometimes does end up) stalling. I can occasionally save it if I let off the gas before it dies (?!), but not always. Once the car is warmed up, I don't have any trouble, but when it's cold, it's frustrating as heck!
It also has decided that it doesn't want to be in neutral to start.
Tranny? Motor?

You removed the best street performance system out there, and now it doesn't run right. Well, put the computer system back on.
If you can't or don't want to do that, get that el-cheapo carb set properly. They are my least favorite carb out there, but they will run better than what you describe. If it's a cold running problem, it's choke related. Although, it could be insufficient timing as well.
If it doesn't start in neutral, but does in park or in a gear, that's a neutral safety switch problem.

Correction: I didn't remove it. I bought it and it was already like that. And I've had the choke and timing set within the last month, but I can have it checked again. I'm hesitant to put the computer back in it, but I might when I get my mechanic's cert.
OR if you have a suggestion for a better carb that will be street legal...It'll just have to wait for the wallet. Joined: Mar 2000

Okay, I should have said, "The best street performance system out there has been removed..." My apologies for assuming you did it.
The only street legal carb is one that is emissions legal, and the only one that would be emissions legal is a computer controlled q-jet.
Most likely what you have on there can be made to run correctly. Start with the basics - timing (assuming the proper type of distributor is installed - needs vacuum and mechanical advance), fuel pressure, float level, choke, idle mixture, jetting, etc.
