need help asap, car stalling, stumped

Hey im pretty new to TPI so im doing the best i can. Ive always run carbs in my third gens. So i have an 89 5.7L TPI GTA and this has been happening for a while but very seldom. its getting worse and today i started the car and stalled within 2 seconds, kept doing it so i held up the rpms drove home fine shut it off restarted fine. this is new, it used to just start popping/stalling and smelling really rich during driving every so often. but yesterday it did that like 3 or 4 times. but a recycle of the keys would always fix it.

the only mods i have done is a custom cold air intake in which i had to unbolt the maf from the mount but still seems sturdy and relocate the canister a little bit. Cat/AIR delete. since i did the delete ive had an SES light on which i expected so i dont know if the stalling issue is related. Or if its throwing more codes. i dont know how to check codes so i will read up on that. I am going to start by checked the TPS and IAC. And anything after that i am stumped maybe a bad MAF? SHould i check injector pulse as well? Vacuum? Ive also noticed a major decrease in fuel economy the last month.

ANy advice would be great, going on a 12 hour drive next week strapped for cash and need to fix it myself if i can asap. thanks alot, id appreciate any help.

so after doing a search i should replace the two maf relays on the driver side firewall and see if it fixes it? Is it possible that my maf is faulty from being disconnected from the mount? should i pay 2x as much for gm relays? are napa relays really that bad?
