Overthinking head gaskets

Burned an valve on the RHS vortecs and decided to replace with AFR 912 Vortecs- recommended head gasket is FP 1003. Gasket taken off was 7733 for iron heads. Due to my location and not knowing my piston to deck dimension- I gambled and ordered a set of FP 1094 and GM 14096405...well guess what-it has been zero decked, .030 over bore. Live in northern Canada with extreme cold and am concerned with brinnelling. Gaskets I have been looking at are:
AFR says FP 1003
FP 1143 MLS
Cometic c5474-040
FP 1010

The Cometic is for the Vortec with the usual GM valve kickouts, the 1143 is round. The 1010 is copper wire. I've talked to a couple engine shops and they prefer the round style gasket, FP says the 1142 will be too small for the chamber- go 1143. I overlaid the GM on the afr chamber and it fits very well- so if going round it would have to be a larger diameter to seal correctly. Cometic is hard to get here.
Sooo what do you think?

Without bothering to look them up, choose whichever one has at least 0.037" thickness and the least crevice volume.
