The 601 is a "Thumpr" grind. It is designed and optimized for the "sound" it gives. Almost certainly, won't make "the most" power; might be OK, but not, "the most". It's for flat tappets. I would not run that in any motor I would ever build.
The 304 grind is made to go fast etc. rather than for "show" like the other. It's relatively mild but will probably run better than the other. It requires roller lifters. Note that the "07-" in the part number means that it is for LTx series engines; you'll need to cut the dowel pin off to only about ¼" (6mm or so), and it probably does not have the lobe for a fuel pump.
Either one will require extensive work to the heads, to prevent catastrophic failure. Those heads in stock form do not support that much valve lift; the bottom of the retainers will crash into the top of the valve guides, and parts WILL break.

As far as I know, 2000 was the last year for engines that will fit that cam.
What engine do you have EXACTLY?

Yeah thats a latemodel roller. Roller cam will work fine just trim dowel back
I'd run the 304 because its a roller

Wear. Flats need special attention to break in and oil type. Rollers do not plus rollers are smoother and can tolerate more aggressive cam lobes but not like you need to be too aggressive here.
