When i got a set done 5+ yrs ago-they did the intake flange
They will do the angle milling b4 every other bolt hole is drilled and that will take care of everything.
You might have to throwaway the intake end seals and just use silicon (which is what i do anyway).

I spent the last several years doing cylinder heads at the local machine shop. I've angle milled more chevy sb heads than I care to remember. Very labor intensive job. Did MANY sets of Dart Iron Eagles for the local roundy-round cars and drag guys. {VERY GOOD HEADS - angle milled one set .125" and then flat milled another .100" !!!}
After the block side of the head has been shaved, the head is repositioned on the machine and set up to do the intake side of the head. On my own set(and all others), after taking .125" of the deck, .060 was taken off the intake side. You have to correct the angle of the int. side - had a specially angled level that leveled from the deck.
After that, all the head bolt holes have to be spot faced to make sure they are parallel to the deck. Lastly, the head is turned upside down to drill the alignment holes(5/16" dowels).
To answer your question about the intake - NO, you don't have to send it out . When you are ready to install the intake, set it on the assembled motor before you put any sealant and look at the top of the motor/bottom of the intake to check for clearance. Make sure you have a gap all the way across (from one head to the other). If not, get the grinder out. Either the bottom of intake or the top of the motor. Sometimes both.
Hope this helps,
Scott
