305 Knock Sensor in 355
When I swapped the motor, I just plugged in everything from the old block into the new one, So I am still running all 305 stuff except for the chip. My question is, what effect could running a 305 knock sensor have on my 355?

it could cause it to ping like a bastard because the 305 sensor is designed to be sensitive to a different frequency. A new one is only like $20.

350 is a 350. The year doesn't matter. Just make sure you get the right one for your ECM. The speed density cars used a different knock sensor than the MAF cars.
