Say I came across an LT1 engine without wirring or ECM, could the gen 2 engine with it's LT1 intake run with the TPI sensors and ECM?

Why not??? You maybe need to re-wire the inputs for the optispark to the wiring for the old distributor module and coil????
I would love to hear that someone has done this...

I was wondering if the swap could be easily done.

- Pull the intake and drill the back for a distributor.
- Remove the Opti-Spark (or go ghetto and leave it!)
- You'll need to use a MAP or a MAF sensor- but you won't need both (just remember to use the right one with the right system- Mass Air versus Speed Density).
- It will need a custom chip.
