Help with heads and head gasket

I'm not sure which head gaskets I should be ordering for my car. I've heard things about rubber coated shims and other things, as well as 350 gaskets being right for certain applications.

I'd like to have the heads milled down too for a little bump in compression. How much should they be shaved down? Will this affect what head gasket I need to use?

no, milling does not change the gasket requirement. I have used fel pro gaskets for years with no issues. don't go crazy with the milling though. I wouldn't take more than .040.
