The noise level of the gears depends on how they're set up. You may find it noisier to drive since you'll be running at a higher engine RPM. The engine and exhaust noise will probably be higher.
Reliability again depends on how they're set up. A properly set up rear end will last a long time unless it's really abused. Then no mater how it's set up, it will usually fail.
In a street car lower gear ratios (numerically higher), will also see a decrease in gas milage unless a taller tire is installed. The speedometer will also be off and unless corrected, will cause the computer to have false readings.

I used to have a 79 Z28 4-speed (no OD) with 4.10s. They were no noisier than the stock gears (3.73s in that car) and was otherwise OK. The car had more launch but ran out of steam even sooner on the highway. I doubt it would even get up to 90 mph. It didn't change the gas mileage much. I don't recall for sure what brand they were, might have been Eaton.
