It grinds... Big time... So bad that I usually keep the car in reverse when the engine is shut down, that way it isn't a problem. Is this a tranny or clutch issue? What should I do about this?
If I need a new tranny then I would try something more beefed up to be able to handle a future 350/383/400.

This is common for non synchronized reverse. There could possibly be a problem with the clutch but even if the clutch is working properly it will still do it if you go to reverse too fast.
A good way to test proper clutch function is let the car idle in neutral and when you put the clutch in and hold it there for at least 5 seconds. After 5 seconds try to go to reverse. After 5 seconds if everything is working properly the gears should be stopped in the trans and it should not grind. If it still grinds after 5 seconds then it is possible the clutch is not fully releasing.
calgutie is right in that as long as the clutch is working properly the trick is to hit any of the forward gears first and then reverse. Hitting the forward gear will stop the gears from spinning and allow you to get reverse without grinding.

And once you've learned how to drive it correctly, change the fluid IMMEDIATELY, so that all the metal chips that have been shedding into the fluid off of the gears as they've been getting DESTROYED, are flushed out of it as much as possible and do as little further damage to the rest of the transmission as possible.

But if going into another gear, then first prevents it from happening, you still don't have a "must rebuild" situation
