fuel pressure
I have a speed demon 750 and I have a holley fuel regulator and fuel gauge, now my fuel pressure is 2.5,it was higher but the person working on my car turned it down ,and I can't figure how to raise it, I started my car and let it operating temp and adjust the allen screw and nothing,I mean I took apart regulator everything looks fine and clean.

thats how you do it, if it doesnt something is wrong. you were adjusting it with the pump on/engine running?

the gauges are alot cheaper than the fpr. or maybe someone else has one you can borrow to try like the type you use for troubleshooting at the parts store

Carbs don't work off of fuel PRESSURE; they work off of VOLUME.
All that matters, is whether the bowls are full or not.
If the fuel system could keep the bowls full at .00001 psi, then .00001 psi is enough; and, any more would be (a) a waste, and (b) an invitation to risk of other problems.
Of course, that's an exaggeration, in pure numerical terms; but it's the concept that's important. And don't forget also, that means full AT ALL TIMES AND UNDER ALL CONDITIONS. Going through the traps for example would be one important condition.

Well one bowl is full the other is on the first line barely all the time, I just thought that for the demon carb I have it says to keep it at 5-8 psi, but I got good vacuum readings so I'm assuming there's no vacuum leaks,I have a edelbrock 600,I'm really debating whether to switch but I mean there's no major problems with the demon I just read a lot of different Info on which carb. for my engine which has dual exhaust,headers,882 heads would be best

its hard to tell if the bowls are full unless it feels like it gets weak at the end of a run if you dont have a a/f gauge. thats why they say set it 5-7 psi. the carb is fine for that engine, i wouldnt put the edelbrock on it, that really has nothing to do with the carb
looking at a pic of it the bowl adjustment is the same as holley, the screw on top of the bowl. you tune the carb for your engine?

I have an electric fuel pump,I read something like if you take the spring out of the regulator and it stays below 3psi it could be the hose but I'm confused.
