Holleys are definitely easier to rebuild for a novice. QJets seem complicated to most people the first few times through, usually.
As for performance, I can make ANY QJet run equal to a well tuned 750 vac.sec. Holley. But out of the box, with stock jets/rod/etc most QJets are dogs. Remember that EVERY QJet ever built was from day one an EMISSIONS carb and some of the design of it is just not well suited to performance applications. It's all fixable, but not without some more serious tuning efforts.

79 Malibu "beater" w/junkyard 400 SBC, tweaked QJet 4bbl, finally a decent set of heads, a few other tricks. A maddening 13.000001 @ 108 on the motor with little traction. No nitrous runs with the new heads yet.
Grandma's old 78 Malibu (33K miles!) soon to have the powertrain from the 79 put in it.

If you go the Q-Jet route, get to know your local junkyard! Go in there and get a bunch of metering rods, jets, hangers, and linkages just in case you bend one by accident. Go ahead and buy a good used Q-Jet for experimenting with as well. Those extra rods can be custom ground but they may erode faster. It never hurts to have a good inventory of HEI springs and weights either!
The Q-Jet would be my choice if you aren't going to stray too far from stock. A properly set up Q-Jet will give you the linear throttle response you want without killing your gas mileage around town.

oh yea. holleys are easy to rebuild. **** i can rebiuld one in 10 minitues(not joking) holleys are finakey as hell. i'm always messin with the needle mixture screws, jets, flote level, idel speed. Q jets are good for relibilty with a bit of performance. i would go with and edelbrock/carter. i just wish the came in more sizes. 500, 625 and 750 cfm just dont cut it.

I am always outside swearing at my Holley. They are easy to get running but fine tuning is pretty hard. Mine is slightly rich or all out lean. Basically performance tuning is easy but mpg tuning is hard. Q-jets are by design gas misers. Holleys seem to dump it in(from experience).
