I have a 180 thermostat, the stock radiator, the fan is wired to the ignition to always be on, the transmission is separate from the main cooling system, (has its own cooler now) but the car still skyrockets to 220-240,
And even sometimes goes to 250, but after shutting the car off there is zero gurgle or bubbling. it has a new thermostat and the radiator is not clogged. Any ideas how to fix this?

Does it cool okay above 35mph and is only an issue at idle?
Assuming you recently cracked open the system? If so, it may be air-locked. Try parking on an incline, both with the front pointing up and down. Try compressing the upper radiator hose while at temp and cold in both directions.
The other thing that comes to mind is do you have ALL the factory air deflectors installed to include the foam bits? If any of this is missing it may be a situation where the cooling air is being bypassed.
Lastly, but probably not a big worry, is the hood’s cowl seal. This too helps direct airflow where it needs to go.
Are there any "modifications" to the factory cooling system?
The factory temp gauge is notoriously inaccurate, and only good for relative readings. Obtain an IR temp gun (HF sells one for about $25) and see if the engine is actually getting that hot before you do anything else.
I agree with ironwill. "Obtain an IR temp gun" I have one & have used it to check the engine temp at the thermostat housing (180-185). Never had a heating problem
with my 1984 Trans AM.
i have a byscane, well its a customers, and have been fighting an OH issue.
I removed his autometer guage and installed a cheap oreylies guage, ran it up over the cowl and placed it on the side of the dash.
never been over 190. But the autometer gauge shows 220-230.
You have to check and verify the temp gauge works propely.
I had similar issues. After replacing every part that aids in cooling I decided to purchase BeCool fans even though my fans turned on. The new fans solved my high temp issues. See below link.
alright guys i have bought a temp gun, made sure the car went up to 220 on the gauge, and i checked radiator, then the radiator cap, heater hoses and the thermostat, all was reading 160-190 range, most likely still gonna get a new radiator and a new temperature gauge.
