How hard should it be to swap an engine out of on a 91 GTA? I have never done an engine swap before, but we are goin to tackle it here soon.

I assume you mean you're going from TBI 305 to TPI 350.
Not too bad. Take pictures of both before you start. Tag/label things as you disconnect them. Take out the harness in one piece, you don't need to cut anything. I left sensors that weren't attached to the engine on the harness as I disassembled.
Worst part will probably be dropping the tank to change out the fuel pump. An alternative would be to put in an in-line electric and let the TBI pump be a pusher.

As five7kid stated, definitely take pictures prior to removing the old engine as a reference to where items connect. A good advice would be to start putting some of the accessories from the old engine to the new one. As far as TPI goes, the only problem I had was making sure I had the right bolts going to the plenum and so on. Since going with a 350, you need to change the 305-knock sensor to that of a 350. Chip will need to be replaced and fuel pump. Question, since you already have a cat-back system, why not invest on set of headers? Hope I’ve help and best wishes on your engine swap.

Ok, I get the part about a '91 GTA having a TPI.
What I don't get is what car is getting an engine. In your sig, you say you have an RS with open element, etc. In the message text, you talk about a '91 GTA.
Are you saying you are helping someone change the engine in their '91 GTA? If so, that typically isn't called an engine "swap", but a replacement. Going from a 305 to a 350 isn't really a "swap", either, since the basics are all the same.
However, the factory used different injectors, fuel pressure regulator, knock sensor, & PROM for 350s than they used for 305s. If you want to call that "swap" stuff, I suppose you could make that arguement. More like "tuning" I'd say.
But, I think I now understand that you're going to change out an engine in a '91 GTA. Am I getting closer?
Did you really want to know how hard it is to change out an engine????
