will a MAC y-pipe bolt up to a set of ELDERBROCK headers?

No clue. In general, though, each manufacturer makes their headers unique, so the connection to the y-pipe would be in a unique location as well. What EDELBROCK headers were you considering? The TES come with the y-pipe.

I've never seen TES offered in anything but a complete set to the cat. But, I haven't lived long enough yet to have seen everything.

Nope, each company uses different positions and mating connections. I don't know what Edelbrock uses (probably similar to an OEM 2-bolt exhaust setup), but MAC uses a specific studs-on-flange retainers with knuckle-and-socket type pipe connections.
