How hard to replace head gaskets?
I guess my headers would have to be removed to change the gasket, But I've never played with my headers or anything like that,is it very hard to do?

Your title referred to head gaskets, and your message talked about headers. Two different animals... yes, you have to detach the headers to get at the heads, but if you are going for head gaskets there is a great deal more involved.
Step 1) remove intake
Step 2) remove heads
Step 3) place new gaskets into proper position.
Installation is reverse of removal.
Seriously, though, I am unclear whether you are after the head gaskets or after the header gaskets. Which is it?

A head gasket will be a real pain in the butt to change if you're not mechaically inclined. Like D Amlee said, you have to take off the intake, heads, and headers. You also have to take off most of the accessories and brackets from the front of the engine. And remember the distributor comes out with the intake and you'll need to readjust your rockerarms. A head gasket job is not for the faint of heart.
defineatly not fun, make sure you have a torque wrench handy those head bolts are not easy to get off at all, basically you are taking off the whole top of your motor, but it is a great oppurtunity to make some performance upgrades though

I hope you don't mean a torque wrench to take the bolts loose! A torque wrench isn't meant for removing bolts, it is meant for tightening them a certain amount. If you use it to loosen them you could damage it!

Short block sitting on a stand. (Man, those Fast-Burn heads sitting on it look good!)

If you have never done anything like that before you probally should have someone else do it. You could easily mess something up and have to take it back apart again...just a suggestion though.

Using a torque wrench to remove bolts should not hurt it at all. I use them all the time to check break-away torque on fasteners. Also a certified (calibrated) torque wrench is calibrated in both directions. But, head gasket changes are a pain, no doubt, that's why if you're going to do it, consider making upgrades while you are at it.
