Stroking 350 with .040" pistons???
Do i have any options of stroking my motor that was rebuilt with a .o40" overbore? Or should I just go get a rebuildable block from a junk yard?

You might beable to over bore it 0.06 over if you have it sonic checked. But you might as well start with a virgin block if you can find one.

DO NOT go 60 over unless you have an oldskool block from the 60s/early 70s. 40 over is the most for a newer factory block. Stroke should have no real impact on how far you can bore the block...just don't use the short rods from a 400 if you stroke it. I have a 385, 4.04 x 3.75 and its fine. Use 5.7 or longer rods and don't worry about it.

Because usually a .03 is required to cleanup the bore and then on the next overbore another .03 over is .06. But sometimes a .04 overbore is required to cleanup a damaged bore.

There are plenty, you can't just look in a catalog though because they only list the most popular size. You have to look in the piston manufactors you want catalog to find them.
