Bigger cam and carb, or smaller cam and Stealth Ram?

I have had a Vortec 350 sitting in the wings for 2 or 3 years now, I'm finally getting around to rebuilding it. It's getting 2.02 1.60's cut into the vortec heads, and the rest of the engine is getting a basic overhaul. I have an LPE cam, but it's small, I believe it's the 211 camshaft. I'm considering selling it and purchasing a camshaft from this guy:

The guy has 3 different cuts, I would consider the hot cam to be a decent cut for my stealth ram setup. I'm considering going to the larger 230 duration camshaft if I do a carb. The carb setup would consist of a street demon carb and performer or performer RPM type manifold.

I'm thinking it would save me a lot of hassle going to the carb setup over tuning the stealth ram setup, but I'm wondering which would make better power.

The car has a turbo 350, 3k converter, 3.73's and pretty short tires now (probably 27in tall). It's also really light like 3200 pounds or so. I drive the car to the track and race it, then come home, that's about it. I'm kind of at a cross roads right now so any input would be appreciated.

Well if you're only gonna drive it to the track and back I'd just go carb. EFI is great for making a raunchy car practical and making it through emissions, but I dont think either of those apply to you.
