I believe the larger your intake runner the lower your RPM power band will be... I think. Not an expert by any means, but if that holds true, you'd be generating more power (torque) in the lower RPM...

I'm in the same market, but I've got the Daytona-style hood so mine will require more contour-matching. If you just have the stock RS hood then you should be able to accomplish the results you want...

If it is backfiring then there are unburned hydrocarbons (read: fuel/gas) igniting in your exhaust system somewhere. If it is stalling out at idle and then taking a few cranks to get started again...
