It's either 20 or 18 for most all wiring in the car. Heavier gauge wiring is 14. I picked 18 though.

16 is what I usually replace wiring with, but most stock is around 18 like deadbird said. Realistically, as long as you stay close you'll be fine. Like, don't join a 12 awg to 18 awg. The wire will only pivot on the thinner end, and over time it will crack the copper strands.

It all depends on how much amperage is going to go through the wire.

10=55
12=41
14=32
16=22
18=16
20=11
22=7
24=3.5

That's going to depend heavily on the length of the wire used also. It's been a while since I took my MECP, so I dont remember the exacts

I really doubt that much over 18 is needed for sensors, its not like they use 10 amps or anything. Most likely they'll use 5 volts and under a few amps

EDIT: Noticed a glitch. SOme things liek the ECM draw a lot of power, so those wires will have to be bigger. But for stuff like the O2 sensor and knock counter, smaller wire should work fine

18ga stranded copper for senders, don't use the solid stuff like they use in houses because the conductor cannot put up with the vibrations in a car environment
