Take a picture of the engine compartment of each car. Everything you see in there that is attached to the engine or goes to it needs to be changed.
The ECM under the passenger side dash needs to be swapped, as well as the harness that goes to it through the kick panel (take off the plastic fender liner on the passenger side to gain access to it).
The tranny is attached to the engine - it needs to be changed. The front springs and swap bar are different - change 'em. The engine mounts on the front cross member need to be moved. You might want to consider unbolting the front carriage with the engine/tranny still on it if you can lift the body up high enough and move the engine around somehow in that state.
The tach is different between V6 & V8, but 'Birds & Camaros also use different looking stuff. I don't know details, but the difference between V6 & V8 tach is basically a resistor.
Your best bet is to label everything from both cars as you take them apart, and take pictures along the way. That will be invaluable as you put the V8 driver back together.
