Hey so i looked and only got general answers.
When switching to a carb... what wires do you need to keep and which wires can i cut..
All i have done is taken out the 305 and replaced it with a 355.
I plan on being able to use my heat, windshield wipers, windshield wash, and i'd like to use my cruise and power steering.
I bought two aftermarket gauges one for oil pressure and one for water temp...

Aside from reducing clutter, there's no reason to cut any wires. The wires that used to go to your coil now go directly to your HEI.

a long ways from littleton. I'm out in peyton. 30miles east of colorado springs.
and i wish to reduce clutter, and get rid of any useless wiring.
And my hei is a mallory unilite and i bought a new universal coil. so i dont think it will just plus into it...

Driven through there many times. The generator in the '57 went out as I was going through there once.
All of the wires that go to the ECM pass through the passenger side fenderwell and can be removed without cutting anything. The wires you need for the rest, except the torque converter clutch lock-up, go through other connectors.
You'll have to put different terminals on the wires for the distributor and coil, but that isn't a big deal.

so everything from the pass side fender well can be removed? but my alternator connected to that wire harness.... and what about my manual transmission? (speedo gear and the other connector), alt, and such dont they run through the pass side fender well or do they all run through that connector on the firewall on the drivers side?

The alternator harness should not have gone through the passenger fenderwell. It may have been wrapped with it, but it doesn't run through there.
The rest of the stuff you mentioned should go through the driver side firewall.

Remove the plastic fender liner from the passenger side.
Disconnect the harness from the ECM and remove the clip from the connector that passes through the kick panel.
Pull all the wires that belong to that harness out of the vehicle (might as well unbolt any sensors from the car and remove them from the vehicle with the harness).
