Both. Ceramic coated stainless. 
But really, coated is the way to go. Stainless is just like any other header just made with stainless steel. After you run it for a few minutes it will discolor and stay a brownish color from then on out. No rust though.

Ceramic coated. Stainless headers are nice but they will eventually rust in places. Not all stainless steel headers are corrosion free. Plus, they ommit heat the same way as regular headers. Ceramic is the only way to go.

Best of both worlds,stainless and coated SLP tri-yz whatever you get have them coated.Mine lost only a very little bit of the sparkle.

for show purposes i disassemble the exhaust once a year and go over it but even in a perfect world with no rain or salt it happens.
