Yeah, wood would work, but it's not the best thing for a wet-flow manifold. The gas tends to break down the wood, and it's got no where to go except into your engine.
I've heard of a few guys using old plastic cutting boards successfully.
Watch for hood clearance issues.

polyethelene starts to deform, (aka melt) at 170 degrees, which many cutting boards are mde of, so do your research on what material you are going to making it out of. I was kidding above.

i would suggest a high temp plastic that i bet you could find a slab of the net somewhere, as well as some sort of engineering machine shop or something like that, that deals with different types of materials.

I think phenolic would be a better choice. I also like aluminum, but not everyone has access to a mill.

That holley piece is only $30 or so. A lot of places have them. Just cross reference the part number with Jegs or summit.
