Got 255-50ZR16's on mine (rear)
I don't think they recommend any bigger on 16x8

There's plenty of room with 255's, even at 2" lower than stock, but the tire manufacturers don't recommend going any wider on an 8" wide rim. I have no rubbing problems.
A few guys have ZR-1 size 17x11" on the rear with 305's and as long as the back spacing is correct they don't rub.
As far as performance goes (with tires) bigger is generally better, as long as it fits without rubbing.

My black 86 IROC had 295/50-16's on the back when I bought it. They rub a little when pushing through a curve (you know, when you're not satisfied with just slowly pulling away from the guy that's been tailgating you and you want to just disappear!!). Anyway, they are a little too big, but everyone like's the way they look. I've had folks follow me down the road till I stop (make's you nervous) then pull up and ask about the tires. Makes it worth it.

I believe the stock rims for my '83 TA are 15-7's. The stock tires are 215/75/15. I put yokahama 225/60/15 V-rated tires on the front, I like them a lot, but want some wide *** one's on the back. Anyone know what the biggest you can go on a 15-7 is?? Lookin to get new tires in about a week or so (Inspection ends tonight...damn).

i'm running 245/60/15 goodyear eagles on 15x7 wheels on all four corners on my 84 camaro.
i rub up front, but have plenty of room out back.
i wouldn't go bigger than a 245 on a 15x7 rim.
