You already know the answer. Water in the oil.

on a 300 mile interstate run, I would think that the oil would get hot enough to burn off any condensation. If its not burning coolant, then I dunno. If you had said you weren't driving it far enough to get the motor to operating temp, then I would say condensation could be the answer, but I don't see that w/ the engine at operating temp that long.

A functioning PCV system usually controls that moisture very well. Make sure your's is operating.

If it were just mere condensation, you would find a yellow film on the underside of your oil cap. This might be a very small head gasket leak. Also check your coolant for "rainbow swirells" meaning oil in your coolant. Any white smoke other than the normal steam? Also look for crappier idle and such. If all this exists, you will need a head gasket job. Its not that hard :P
