Typically, you should be able to bend the baffles a little to clear, but sounds like they removed them.
They make baffled grommets - under $5 usd if you can find them locally. They work fairly well and SHOULD clear the rockers. I've used these before on cheap stamped steal covers without baffles. Eventually the foam will need to be taken out and cleaned - sooner or later, depends on your engine. With the two pack, you could swap over once the foam gets oil soaked, clean and repeat - or get another set of valve covers. Two of my experiences come to mind.
The first was with Comp Pro Magnum full roller rockers and OEM centre bolt valve covers. The only trimming involved was along the cross brace which supports the bolt tube. Minimum needed. Maybe 1/16" and a bit. GM's baffles remained intact.
The second was with the GM licensed ProForm diecast covers
No bracing to trim but the baffle had some slight interference with the rocker trunnion. A little trimming and the removal of a piece about 3/8" square was required. The guts of the baffle was left undisturbed.
FWIW, that last engine had a lot of blowby and I incorporated a catch can between the PCV valve and the intake manifold.
