Not the throwout.
Think for a minute about what's going on, under the various conditions you're putting things through.
With the car parked and the clutch pushed and the transmission in any gear, the throwout bearing is at max load, and the transmission is all sitting completely still. Do you hear the noise? What's moving, that could be making the noise?
With the car parked and the trans in neutral and the clutch pedal out, the clutch is hooked up, the throwout is at absolute minimum load, and the whole guts of the transmission is spinning. Do you hear the noise? What's moving, that could be making the noise, now?
The transmission makes a slight whirring or whining noise, normally.
The throwout makes loud shrieking or grinding or wailing noises when it's bad, but only when the clutch is pushed.
Sounds to me like there's nothing at all wrong with your car. Sounds all normal.

Whatever it is, it's not the throwout.
Last time I heard it, I couldn't really tell enough about it, to diagnose it for sure.... I was too far away at the time... sorry.
Changing the fluid is usually a good idea, as long as you put the right kind back in.
Since your car is a 1987, you probably have the first-design transmission, which takes gear lube. I'd recommend Mobil 1, or Red Line, or other high-quality synthetic gear lube; light weight, like 75W-90, NOT anythingW-140. If it turns out your trans is the 2nd design type, use ATF.

Both kinds of T-5 were made by Borg-Warner.
You can tell which version it is with it in the car. Look at the front countergear bearing, which is in the front surface of the trans case where it mates to the bell housing. It's down low, toward the pass side, about 2½" in diameter. In this pic, the upper pic is the old style, the lower is the decond design.
It's also possible, since it's a conversion, that the PO didn't put a pilot bearing or bushing in the crank; in which case, the car will simply eat and destroy every transmission it gets, until somebody assembles the car correctly.
Look for the pic in this post.
