Birdman - The easiest fix here is to get a used one and swap it in (even a second spare is a good idea) from ebay. They don't take too long to replace.

Don't use the manifolds, they will restrict the flow and power (especially considering you are over 400hp). Try the hammer first, if that does not work move on to another set of headers.

When you shut the car down (garage or driveway) the engine stops running and therefore the cooling system stops...

For accurate temperature I purchased a digit gauge (Cyberdyne was the brand at the time I believe). Tapped into the cylinder head/thermostat housing for the sensor.

Love it and the digital gauge...

You may not have enough cooling capacity / radiator flow to properly cool the engine. You need a radiator, water pump, and thermostat to hold and flow enough coolant. SBC 400's are famous for this. ...

Makes sense and I do not disagree, however why get a 3 way cat with AIR and not use the AIR line to the cat (makes no sense). You are basically telling the convertor to work less efficiently.
