Why do you automatically think ... 400s=RUN HOT ??!?!?
Wasn't it said over and over and over again that the fact that 400s run hot is strictly a fairy tale ? Yes it is !! Start it, enjoy it and stop worrying about cooling it. It'll be fine! lol

if you can, find a way to turn one fan on at a time

Have a manual fan you can start at about 180 and
another that will automatically start at 200. Its also nice if you can manaually start the second fan if need be.

Mine will run 190 even at light throttle when only 1 fan is running. The second fan will pull it down from just about anytemp.

400's are great torque motors, I have run a few on the street and have had no overheating problems. Be sure to drill the steam holes in the heads to match the ones in the block. I am concerned about the vortec heads and flattop pistons, thats about 11:1 compression...too much for pump gas and iron heads.

Two words, Watter Wetter, the stuff really works well. But I haven't had any problem keeping my 406 cool. Those vortec heads can handle a little more compression than other heads, and like the timing to be lower anyway, so you may not be as bad off as you think on the timing.
