Check the basics, timing, AFR, idle settings and ignition components. Report back what you find

Is your float level set correctly. Read Sofa's Holley Tuning Sticky: https://www.thirdgen.org/forums/carb...ey-tuning.html

Re: Stalling
It’s been along time since I’ve fooled with a carb but.
Sounds like a mechanical hang up not the electric choke pull off.
The setting on the side adjust the amount of time it takes for pull off of the choke I don’t think it’s for the choke adjustment. The linkage might be bound on the high idle cam side of the choke .

Re: Stalling
The linkage can be pinched with the air cleaner housing. They recommend pn 786004
Air cleaner base to clear the choke linkage.

Re: Stalling
There are two primary adjustments: the fast idle adjustment screw and the choke timing. The fast idle adjustment screw controls how far the primary butterflies are open when the choke butterfly is closed or partially closed. It controls how fast the engine will idle during cold engine warm up. The fast idle adjustment screw is located on the bracket that is screwed to the throttle shaft, behind the choke housing
