The LS7 oil pan is pretty shallow. I never test fit in my car but it didn't raise any red flags in my mind. It's the tank that's going to give you a headache figuring out where to put it. And it's probably no fun routing hose past the headers.

The more I read about this I’m asking myself why I’d sign up for the abuse. 😂🤣 Seems the better route is to switch the pan to wet sump. I’m not gonna race it anyway.

Yeah, it's kind of pointless unless you're going to spend time on a road course. And if so, then you'll want a multistage pump, not the stock LS7 format.
I would invest in some good baffles, a scraper, and trap doors. Improved Racing has a nice lineup of products. You can look at my build thread for the scraper I used with my LS7. Don't order off the Improved Racing website, call them and talk it through. It's one of the most important calls you'll make in your engine build.
You will also find a list of pans with dimensions in my build thread. I personally dislike the LS1 f body pan, especially for 4-in stroke engine. Smallest capacity of all stock pans, and the front is so shallow that you can't even have a baffle under rods 1 and 2. Those rods just barely clear the pan and whip up the oil.

And don't buy a crank bolt spacer, I've got one for you! It's been a multi-year mission to get rid of this thing!

A Katech Blue pump just popped up for sale on LS1tech, https://ls1tech.com/forums/market/1952385
You could unload it at same price if you decided to not to use it. Might be wise to disassemble and clean.
