Is the black stuff sooty(like powdery kind of, particles fall off if you touch or rub it) or is it oily/greasy? The former means you are running rich(typical of these engines) the latter indicates bad valve stem seals or piston rings.

Test fuel pressure & leak down rate.
Put a tee into the vacuum hose that goes to the map sensor, hook up a vacuum gauge. It should be above 16.5" at idle, with a smooth needle sweep. Have the engine scanned for live data.
You can test the coolant temp sensor, you need an ohm meter, thermometer, & a pan of water (heat it up slowly to 220 degrees), note the ohms at different temps. Google GM Coolant Temp Sensor Values for the ohm/ temp readings.
